Fermented in stainless with our house culture, gently dry-hopped, then naturally carbonated and conditioned in the can.

Malt: Pilsner, Malted Wheat

Hops: Saaz, Aramis, Fuggle

Yeast: House Culture (our unique blend of wild yeast and bacteria)

TA: 4.14 g/L

Acidity: Low

Behold! The first in our new single-serving sleek can series of canned wild beers. This series is designed for drinkability, showcasing gentler flavor profiles and lower acidity. Wild beer doesn’t always need to be stored in your cellar — in fact, it can be just as approachable and crushable as the beers you’re used to consuming on an everyday basis. Enter Chaise Longue.

Chaise Longue is all about the hang, whether it’s at the top of a mountain after a grueling ascent, on your own stoop, or on our patio. This Table Beer was brewed to be enjoyed in the now—to make the everyday special rather than be saved for a special occasion.

Way fuller in body than it is high in alcohol content, this lil table beer smells like summer and it tastes like it too. Expect fresh cut lemons, herbs, hay, and field flowers. High fizz factor, and a crisp, dry finish. Best enjoyed all day long.

Even though this beer’s perfect for a long session, it came together relatively quickly, co-fermented with our house wild culture in a stainless steel tank. We achieved the funky, fruity realness we were going for and introduced a gentle dry-hop. From there, we transferred the straw-toned gold into cans to bubble up a bit more, by way of can conditioning. So, here’s to everything from planned porch hangs to spontaneous proposals. (Get yourself a can that can cheers to both!) Only available at our taproom. Swing by for a swig or take a trust fall into a 4-pack from our fridge.

Steve has been a friend and supporter of the brewery since before our doors opened. Although his face may be new to many, Steve’s kindness and talent is unknowingly familiar to most who have enjoyed a an Establishment brew.

Behind countless shoots and far more late nights of editing, Steve has allowed our passion to shine through his lens so that we can share the Establishment vision with those who also love to share good company over a good pint, just as we like to share one with him.

Our new Canned Wild Beers create a space for something that the Establishment crew has been dreaming of for a long time; the funk and character of mixed-culture beer with the ease of a can that can be pulled out of a backpack and cracked with the best company on a warm summer day. To mark this introduction, we are honoured to feature one of Steve’s photos on the label.

THE ESTABLISHMENT BREWER: Damon Mosier

“Pulling inspiration from some of our favorite beers from Belgium (and more recently from North American breweries like Jester King, Yeast of Eden, and Cellador), we wanted to create a beer that is simple in nature but complex in flavor. This is the first of our wild beers that is released in cans and sets the precedent for what to expect from this new line of releases: highly drinkable, approachable, and experimental - Chaise Longue is all of that and more!

It started off as a simple, low gravity base recipe being introduced to our house culture in stainless steel - once our culture delivered some fruity, funky flavors/aromas and a hint of acidity, the beer was met with a gentle dry hop and given some more time to further develop. All-in-all, it was short of two months' time in tank before the beer was transferred to cans and allowed time to naturally carbonate and condition. Get stoked!”
