An annual blend of mixed-culture beer to mark the anniversary of The Establishment, each edition highlights the journey of our barrel-aged beer program.

  • Tasting Notes: Oak / White Wine / Lemon

    A blend of golden sour beers aged an average of 11 months in oak-barrels.

    Bottled December 2019.

  • Tasting Notes: White Wine / Tannic / Rocket Candy

    A blend of lambic-inspired and golden sour beer aged an average of 22.5 months in oak barrels.

    Bottled December 2021.

  • Tasting Notes: Carraway / Black Pepper / Oak

    A Gueuze-inspired blend, consisting of lambic-inspired beer aged an average of 21 months in oak barrels. 

    Bottled November 2022.

  • Tasting Notes: Genmaicha Tea / Black Pepper / Tropical Fruit

    A Gueuze-inspired blend, consisting of lambic-inspired beer aged an average of 16 months in oak barrels. 

    Bottled November 2023.

  • Tasting Notes: Orange Pu’er Tea / Apricot Sherbert / Gobstoppers

    A blend that is both Gueze-inspired and includes a portion of  modern hazy  IPA aged an average of 18.5 months in oak barrels.

  • Tasting Notes: Lemon / Spice / Funk

    Steeped with fresh and cracked ginger. A blend of Saison, lambic-inspired, and golden sour beer aged an average of 12 months in oak barrels.

  • Tasting Notes: Tropical / Floral / White wine

    Dry-hopped with the 2021 Pink Boots Hop Blend. A blend of Berliner Weisse, golden sour, and lambic-inspired beer aged an average of 21.5 months in oak barrels.

  • Tasting Notes: Berries / Tannic / Rose

    Steeped with dried hibiscus flowers. A blend of Saison and lambic-inspired beer aged an average of 10 months in oak barrels.

    Bottled June 2022.

  • Tasting Notes: Blueberry / Lemon / Herbal
    Refermented on 350kg (32% by weight) blueberries, then steeped with dried lemon thyme. A blend of Saison and Lambic-inspired beer aged for an average of 9 months in oak barrels.

  • Tea For Two - Barrel-Aged Beer w/ White Peaches & Oolong Tea      Tasting Notes: Tea / Preserved Peach / Herbal
    Refermented on 350kg (35% by weight) white peaches, then steeped with GABA Oolong Tea. A blend of Saison and Lambic-inspired beer aged for an average of 19 months in oak barrels.
    Bottled July 2023.

  • To Wish Impossible Things - Barrel-Aged Saison and White Wine Hybrid Tasting Notes: Lychee / Piquette / Citrus
    Refermented for 6 months on 300kg (40% by weight) equal parts Pinot Gris and Gewurtztraminer Pomace from Anthony Buchanan Wines (Okanagan, BC). A blend of Saison beers aged for an average of 10 months in oak barrels.

  • Tasting Notes: Prune / Caramel / Toasted Bread

    A blend of Belgian dark strong beer aged an average of 12 months in oak barrels.

  • Tasting Notes: Plum / Sweet Cherry / Chocolate

    A blend of bruin beer aged an average of 15 months in oak barrels. 

    Bottled December 2020.

  • Tasting Notes: Port Wine / Apple Crumble / Oak

    Steeped with Indonesian cinnamon. A blend of bruin beer and bourbon barrel-aged imperial stout aged an average of 18 months in oak barrels.

  • Tasting Notes: Oak / Vanilla  / Ripe Plums

    Refermented on 300kg (30% by weight) santa rosa plums. A blend of golden sour beer aged an average of 11 months in oak barrels.

  • Tasting Notes: Tart Plum / Saline / Umeboshi

    Fermented on second-use plums previously used to make 'Vertical Sunset'. A blend of lambic-inspired beers aged for an average of 11 months in oak barrels.

  • Tasting Notes: Jammy / Tannic / Pinot Noir

    Refermented on 350kg (35% by weight) black currants. A blend of bruin and golden sour beer aged an average of 12 months in oak barrels.

  • Tasting Notes: Floral / Funky / Fruity

    Steeped with dried rose hips. A blend of Saison, lambic-inspired, and golden sour beer aged an average of 12 months in oak barrels.

    Refermented on 250kg (25% by weight) apricots. A blend of Saison and lambic-inspired beer aged an average of 12 months in oak barrels.

    Refermented on 350kg (35% by weight) peaches. A blend of Saison and lambic-inspired beer aged an average of 15.25 months in oak barrels.

    Refermented on 350kg (35% by weight) nectarines. A blend of Saison and lambic-inspired beer aged an average of 14.5 months in oak barrels.

    Refermented on 250kg (25% by weight) whole blackberries. A blend of Saison, bruin, and red sour beer aged an average of 19 months in oak barrels.

  • Tasting Notes: Raspberry Candies /  Bright / Juicy

    Refermented on 200kg (25% by weight) of raspberries. A blend of red sour beer aged an average of 11.5 months in oak barrels.

  • Tasting Notes: Funk / Slate / Marmalade

    Saison fermented on second-use nectarines previously used to make 'Beauty in the Vibrant Form'.

  • Tasting Notes: Stone Fruit/ Juicy / Bright

    Saison fermented on second-use apricots and peaches previously used to make 'Fraction Of The Sum' and ‘Sunblind’.

    Bottled August 2022.

  • Tasting Notes: Stone fruit / Black Pepper / Amaretto

    Refermented on 300kg (25% by weight) of hand-processed elephant heart plums and 10kg of the pits added back for complexity.  A Four-barrel blend of Belgian Rye, Red Sour, Rye Saison and Brett Saison beers aged an average of 20 months in oak barrels.

    Refermented on 350kg (35% by weight) white peaches. A blend of Saison and Lambic-inspired beer aged for an average of 19 months in oak barrels.
