People of the world, spice up your life! Preferably with this pretty little New England Pale Ale. Feeling together, believing whatever, the women of Establishment brewed this using @pinkbootssociety 2022 hop blend and some fun, new-tech ingredients. These Pink Boots are thiol-high, something we reckon the Spice Girls would approve of. 

As with Irrational Things and Dream Synopsis before it, we called upon the thiol-enhancing wizardry that is @phantasm.nz to kick things up a hop. And, as a first for us, we put Cosmic Punch, a thiolized yeast from @omegayeast, to the test—which it passed with flying colours. With fresh grain and floral wafts skimming the top of a well of juicy stone fruit, passionfruit, guava flavours, it hits the palate like a fruit salad tossed in a citrus and sauvignon blanc dressing.  

If you haven’t picked it up yet, the trend of this beer is “only the best’ and the malt is no exception. We used @hogarthmalting pilsner which was freshly malted mere days before the brew. It isn’t news that the fresher the malt, the fresher the taste, but super fresh malt also tends to pack more thiols that serve up a bright tropical aroma that cannot, and will not, be missed in the finished beer.

We’d never let an International Women’s Day pass without brewing the right beer to fill the glasses we’ll raise to the awesome ladies in our lives—including all the ones who came together to make this. After all, (un)like Geri’s union jack mini dress, girl power never goes out of style.

The Establishment Brewer: Chelsea Severtson

“Viva Forever was based on my first recipe when I was a student at Olds College. The crux of the program is a project called a "Beer to Market", where you have to take the reigns on every aspect of producing a beer and selling it in market (recipe development, physically brewing the beer, designing a cellaring and packaging plan, a lot of QA/QC checks, designing a label, selling the beer, getting feedback on the beer, figuring out how to improve the beer, and writing a massive paper about it afterwards). My beer to market was a 4.4% session NEPA called "This Sundress Has Pockets", where I focused pretty heavily on terpene biotransformation. It also just so happened to be the Olds College Pink Boots beer for that year!

For our Pink Boots Society brew this year, I thought it would be fun to revisit my first recipe and make it better - a fresher grain bill with less specialty malt, different yeast, a higher hop load, better cellaring, and the ever-cool Phantasm. I also shifted my focus from terpene biotransformation to thiol biotransformation/expression - it's the cool new thing! So Viva Forever is a really fun full-circle moment for me, and it's been a really fun opportunity to reflect on what I've learned in the past couple of years - it's definitely my best PBS collab recipe yet!"

Viva Forever is Chelsea’s first original recipe at the Establishment and needless to say, it likely won’t be her last. Brewed for International Women’s Day in 2023, 1$ of every litre of Viva Forever will be donated to the Pink Boots Society of Canada and the Women’s Centre of Calgary.
